As I
reached the summit of Bearpen Mountain in
the Catskill Mountains of New York, I
treated myself to a gourmet lunch, which
consisted of a pan-seared filet mignon,
sliced, then topped with sautéed shiitake
mushrooms, shallots, and Asiago cheese.
All of this sandwiched between two
halves of a freshly toasted Kaiser roll.
